Nashville is not only the home of country music but is also is steeped in spicy fried chicken tradition. Bolton's Spicy Fried Chicken and Fish near downtown is well below the radar of mainstream food establishments in Nashville. While in town a couple of days ago I knew I would be stopping by. Top rated by locals, this little greasy fry joint lived up to my expections and much more.

It was mid-day on Thursday when my girl and I made our stop. No crowd. No line. Four tables, menu on the wall, a drive through style tinted slider glass window and a pink door which went to the kitchen. We explored the menu and knocked on the pink door as the sign states. A young black man slid the little tinted window open and took our order. I ordered the wing plate with greens and fries while the girl got the chicken tender plate with wac & cheese and slaw. Yes wac! The "m" was upside down on the menu.

He asked how we wanted it - meaning the chicken. Now I did a bit of research online and most reviews said if you order "hot" you are just plain fuckin' stupid. So I ordered medium and the girl ordered hers mild. Good thing to. My girls mild was all she could handle and the medium was just right and in the same breath hot enough. The greens had a salty pork under tow flavor due to the large chunks of ham and bacon which was incredible. Slaw, wac & cheese and fries were top notch.

Soul food and FTW100 a hand that can't be beat.

While the mildest winter I can ever fuckin remember strolls its way through Iowa I find myself outside abusing the charcoal. One of my favorite things to make are jalapeno poppers.
Get your ass to the mexican grocery and get some fresh jalapenos, aneheims or whatever peppers look good. Remember once you core out the seeds and viens they aren't that hot.
So here's what ya need. Peppers, chorizo, cream cheese, cherry tomatos, garlic, onion, black pepper and garlic salt. Easy.
Dice up 1/2 that onion, a couple of cloves of garlic and toss it in a pan with the chorizo. Brown the chorizo till its cooked.

One of these popper holders comes in handy. I found this one online and it came with a popper core tool (below). Bout $20 American bones. Cut the tops and core out your pepppers. Remember the more seeds left in - the hotter the popper. Place in holder.

I like to put a bit of cooked chorizo in the bottom of the poppers by itself first. It makes a nice meaty first bite (like she likes). I use the fat end of a chopstick and pack the chorizo in real good. This leaves more room for the cream cheese mix. Next as you can see below mix the chorizo with 2 packs of cream cheese. Season with black pepper and garlic salt to your taste.

Mix it all up and put it in a freezer style ziploc baggie. See how I rolled the edge of bag over - trust me and do it. Seal up the bag when full. Use scissors and make a small slice off one of the corners off the bottom of the bag. Squeeze the cheese.

For safey purposes always dawn some Officially Licensed FTW Gear. Available right fucking here...http://www.ftwco.com/ Then cram that cheese deep in them holes. You may have to recruit some help from the likes of the utensil below.
Make'm look all nice and top'm with 1/2 of one of them cherry tomatos. Now ain't that fuckin' pretty if I do say so myself.
Last is indirect heat so keep your pile of charcoal to one side. Throw some little chunks of hickory wood in, open the vents up and rotate around about every 5-10 minutes. When they look this pull them off and let stand for approximately 1/2 hour. Bottomline - make sure they cool down. That hot cheese will fuck your tounge up. At least thats what it says on the wall of Kung Fu's bathroom.

spray painting (aka rattle can) fork legs

so I ventured into the world of rattle canning my fork legs.... I scoured the internet for advice, tips, tricks and think I nailed it.

prep is key.... stip clear from legs, clean, clean, clean, smooth, smooth, smooth
etching primer
quality primer\
multiple (light) coats of paint, sanding between DRY coats (800 grit)\
then once cured (allow several days to truly cure)
then
wet sand with 800, 1000 and then 1500 grits
polishing compound with drill or high speed polisher (careful.... you can fak this up quick if not careful.... slow and steady wins this race)
wax with Mothers was and a powerball

It turned out great.... will post pics soon.No clear coat, not sure if I care about clear... we'll see. How will it hold up? I am confident that it will hold up pretty good.... yes it will chip (so will powdercoat), yes it will fade (so will powdercoat), yes it will will to be waxed and cleaned ( and again... so will powdercoat).

My point is.... you can rattle can fork lowers and have a result as good (if not better, than 2 stage paint or powdercoat if you….

prep, prep, prep\
be patient... take your time while painting coats
don't smack it with a hammer and expect it to hold up (nothing will :)

I ride purely, and only, because it is fun. I ride because I enjoy the freedom I feel from being exposed to the elements, and the vulnerability to the danger that is intrinsic to riding. I do not ride because it is fashionable to do so. I ride my machine, not wear it. My machine is not a symbol of status. It exists simply for me, and me alone. My machine is not a toy. It is an extension of my bein...g, and I will treat it accordingly, with the same respect as I have for myself.

I strive to understand the inner-workings of my machine, from the most basic to the most complex. I will learn everything I can about my machine, so that I am reliant upon no one but myself for its health and well-being. I strive to constantly better my skill of control over my machine. I will learn its limits, and use my skill to become one with my machine so that we may keep each other alive. I am the master, it is the servant. Working together in harmony, we will become an invincible team.

I do not fear death. I will, however, do all possible to avoid death prematurely. Fear is the enemy, not death. Fear on the highway leads to death, therefore I will not let fear be my master. I will master it. My machines will outlive me. Therefore, they are my legacy. I will care for them for future bikers to cherish as I have cherished them, whoever they may be. I do not ride to gain attention, respect, or fear from those that do NOT ride, nor do I wish to intimidate or annoy them. For those that do not know me, all I wish from them is to ignore me. For those that desire to know me, I will share with them the truth of myself, so that they might understand me and not fear others like me.

I will never be the aggressor on the highway. However, should others mess with me, their aggression will be dealt with in as severe a manner as I can cast upon them. I will show respect to other bikers more experienced or knowledgeable than I am. I will learn from them all I can. I will not show disrespect to other bikers less experienced or knowledgeable than I am. I will teach them what I can. It will be my task to mentor new riders, that so desire, into the lifestyle of the biker, so that the breed shall continue. I shall instruct them, as I have been instructed by those before me.

I shall preserve and honor traditions of bikers before me, and I will pass them on unaltered. I will not judge other bikers on their choice of machine, their appearance, or their profession. I will judge them only on their conduct as bikers. I am proud of my accomplishments as a biker, though I will not flaunt them to others. If they ask,I will share them. I will stand ready to help any other biker that truly needs my help. I will never ask another biker to do for me what I can do for myself.

I am not a part-time biker. I am a biker when, and where ever I go. I am proud to be a biker, and I hide my chosen lifestyle from no one. I ride because I love freedom, independence, and the movement of the ground beneath me.
